Spice Bag Mix

By Jael Davison, Catering Assistant

You need:

  • 2 tbsp (20 g) table salt
  • 1 ½ tbsp (9 g) paprika
  • 1 tbsp (6 g) garlic powder
  • ½ tbsp (3 g) onion powder
  • 1 ½ tbsp (7 g) chilli powder
  • 2 tbsp (8 g) Chinese five spice
  • Good grind of black pepper
  • Drizzle of olive oil

Place all ingredients in a jar or plastic container, put the lid on and give it a good shake.

Sprinkle this mixture on to cooked food from a height and toss to coat evenly. The usual foods are chips, chicken nuggets/goujons/wings, pork ribs, stir fried onions and peppers or fried noodles. You could add 1-2 tbsp to a frying batter.

If you can get them, serve in brown paper bags to give the authentic take away feel.

Hints and tips

Onion powder can be interchanged with onion granules.

Sometimes the garlic powder can clump together, you may need to pass it through a sieve or a clean dry tea strainer.

ENJOY!
