Smarty/chocolate chip cookies
By Jael Davison
Ingredients:
115 g softened butter
115 g light brown sugar
1 tbsp golden syrup
½ tsp vanilla essence
175 g self-raising flour
85 g smarties/chocolate chips
Recipe:
Preheat oven to 180c/350f/gas4.
Cream the sugar and butter till light and fluffy, then mix in the vanilla essence and syrup.
Stir in half the flour, then the smarties/choc chips. Add the remaining flour and work the dough together with your fingers.
Line a baking sheet or two with parchment. Roll the dough into 16 balls, place onto baking sheet (do not flatten them) well-spaced out as they will spread.
Bake in the preheated oven for 10-12 minutes till pale golden at the edges.
Leave to cool on the baking sheets, then transfer to a wire cooling rack. These will harden as they cool.
Tip:
When the dough has been rolled into balls it can be frozen. Open freeze on a tray or something flat, then place into Ziplock bags once completely frozen. Cook straight from frozen for about 15 -18 mins.
