Lemon Crumb Bar Recipe

You need:

160 g plain flour

90 g oats

½ tsp salt

½ tsp baking soda

100 g granulated sugar

100 g light brown sugar

170 g melted butter

1 tsp vanilla essence

1 can condensed milk

2/3 lemons, zest and juice (approx. 120 g juice)

2 egg yolks

Ready to start?

Preheat oven 180c/ gas 4.

Place the first 6 ingredients into a mixing bowl, stir well.

Add the vanilla essence to the butter, then pour into the dry ingredients, mix.

Press half of the mixture into a 20 x 20 cm (8 x 8 inch0 greased baking pan, bake for about 12 -15 mins, till just beginning to colour around the edges.

While the base is baking, mix together the condensed milk, lemon juice, zest and egg yolks.

Pour this mixture onto the base.

Sprinkle over the remaining crumble mixture.

Bake for a further 20 mins.

Hints & tips:

This bar freezes well and cuts better when frozen.

If you only have self-raising flour, don’t add the baking soda.
