In addition to the the three key measurements, our catering staff are accredited by the Food Safety Authority of Ireland and accredited to HACCP standards. Management are qualified to degree level in culinary arts and we regularly commission independent expert advice about nutrition for customers.
Delivering HACCP Standards
- Identify the hazards.
- Determine the critical control points (CCPs).
- Establish critical limit(s).
- Establish a system to monitor control of the CCP.
- Establish corrective action when CCP is not under control.
- Establish verification to confirm HACCP system is working effectively.
- Establish documentation for all procedures and records..
